the production of its White Wine "Il Burcinella",
the name originates from the area of the vineyard and the farm, it is
an Innovative Species of Vine -Manzoni 6-0-13 a Botanical Hybrid Sauvignon
- Rhenish Riesling
A Single Vine grafted on a Wild American Stock, features that make it
unique in its species, it is not easy to find original "Grapes"
from the North-East cultivated in ValdiChiana.
The Bunch of Grapes is small and dense, they ripen in the first ten days
of September and yield approximately 900kg of Grapes per hectare, the
entire vineyard is approximately 4 hectares and production is deliberately
limited to 10.000 bottles per year.
Grapes are Harvested by the whole family and the wine is made through
soft pressing, Fermentation is monitored at 22° to 24° degrees,
alcoholic development reaches well over 12°. The Must which is extracted
from the wine-making is left to "Rest" on "its own Wine
Lees" till late February, when "the Burcinella" is ready
for drinking
The Colour is "Pale Yellow" and tends slightly to a "Greenish"
colour, The must at the start is a "Beautiful Faded Emerald Green",
with a "Strong" flavour, a Good Synergism of Fragrances that
combine with each other without clashing (Floreal, Flint/Firestone, Geranium).
Best served at a temperature between 11° and 13° C.

Another major Produce of the farm estate is "Piero's
OIL" Tuscan Extra-vergin Olive Oil.
It takes its Name from the Master of the Estate Piero Jacomoni who more
than anyone else has stood by the Value of Quality and has worked to the
fulfilment of all those quality standards which today represent Agrisalotto's
distinctive features in the global market of food-and-wine connoisseurship.
"Piero's Oil" or "New Oil "is made from hand-picked
Olives at the "La Stella" Olive Grove , a beautiful Hill of
approximately 5 hectares with over 800 centuries old Olive Trees in Monte
San Savino, about 10 km from the farm estate, so-called for the beautiful
starry sky that one can admire every night wrapped up in the gentle darkness
of the Olive Grove.
The Slightly Bitter Flavour and the Hazy Colour are features peculiar
to this Extra-vergin oil. Cold Pressed and not filtered (water cooled
at the Pagliai Brothers' Oil Mill at San Giuliano in Arezzo)
In addition to quantities for "Domestic" use at the Restaurant
and Holiday Farm we produce no more than 5000 bottles a year, although
quantity is subject to the progress of the olive season which can determine
the annual quantity of oil yielded.
