Another of the top products of the cooperative is the “Olio di Piero” extra-virgin Tuscan olive oil.
It is named after the Owner of the Cooperative, Piero Jacomoni, who more than anyone has valorised the quality of the products and ensured that the Agrisalotto respects the characteristics that make total quality its distinguishing trademark in the global market of food and wine products.
The “Olio di Piero” or “Olio Novo” is obtained from olives harvested by hand at the olive plantation in La Stella, a beautiful hilly area of about 5 hectares with more than 800 old olive trees located in Monte San Savino, about 10 km from the cooperative, and is named after the beautiful starry sky which can be admired every night in gentle darkness.
The slightly bitter taste and veiled colour are peculiar characteristics of this extra-virgin oil, which is cold pressed and not filtered (water cooled at the olive press of F.lli Paggetti in San Giuliano in Arezzo).
Only 5,000 bottles are produced annually, in addition to that used by the restaurant and farm holidays, although production is subject to the season, which determines the quantity of oil produced annually. |
